Omelettes are the easiest dishes to prepare and it is also pack full of protein. On top of that, it could be cooked for breakfast, lunch, tea break or even dinner. So, I love to try preparing different types of omelettes and today, I want to share a simple and healthy wolfberry omelette. As you know, wolfberries (kei chi or kee chee) are very beneficial for our health as I had mentioned in this post.
So, other than just using it for soups, wolfberries could also be used for omelettes. Here’s the recipe:
Wolfberry Omelette
Ingredients
3 eggs, whisked till frothy
1 cup dried wolfberries, soaked and drained
1 tbsp olive oil
Instructions
1. Heat the olive oil in a non-stick pan.
2. Pour in the wolfberries and stir-fry for a few seconds.
3. Pour the eggs over the wolfberries. Use a spatula to even out the egg over the wolfberries.
4. Let the eggs cook over low fire and turn it once it is firm.
Serve immediately with tomatoes and salad. It is good as a side dish with rice or even on its own as breakfast.

This morning I half awake, blur blur I thought this recipe make “Lye Chee” omelete.
Then I looked at the picture then I realise it was “Kee Chee” omelete.
I have never tried both, but next time maybe I should try make Lye Chee omelete. It sounds ok.
Have you tried chocolate omelete?? Fry plain omelete then scoop 2 big spoons of Nutella (chocolate spread with hazel nuts) on top.
If no Nutella drop a couple of squares of ordinary chocolate. Actually don’t taste that bad.
engineer: I don’t know, it sounds a bit weird ler. chocolate with eggs? Hmmm….I love chocolate but…..Lye Chee Omelette?? Wei, that’s even weirder ler. Why don’t you try and then tell me how it taste like?
