On busy days when I do not feel like cooking a lot of different dishes, I will take the easy way out by cooking an all-in-one dish such as the mixed bean rice. It can be eaten as is, without accompanying dishes, and it is also nutritious! Lentils are a good source of protein.
Instead of buying different beans, I bought a packet of organic mixed beans for this recipe. So, here is a recipe for mixed bean rice for busy days:
Mixed Bean Rice
Ingredients
2 – 3 cups rice, washed and drained
1 cup mixed beans, soaked to soften
1 large carrot, grated
(optional) 1 small piece of chicken breast meat, minced
2 tbs soya sauce
2 tbs dark soya sauce
2 tbs oyster sauce
half clove of garlic, chopped
cooking oil
Instructions
1. Season the minced chicken meat with a dash of pepper and soya sauce.
2. In a wok, heat up 1 tbs cooking oil and stir fry the garlic till fragrant.
3. Add in the beans and carrot. Stir fry for another few minutes.
4. Add the uncooked rice and stir to mix well.
5. Add in the sauces and stir. Let it simmer for a minute or so.
6. Remove from heat. Pour into a rice cooker. Add water (normal amount used to cook this amount of rice). And let the rice cooker do its job.
You can serve it with some fresh salad. Easy and good too!

Once upon a time KFC sell a very nice mix bean salad in Italian dressing. I use to love that but now they dont sell it any more.
I also love their sweet corn dripping im butter,that also cannot get anymore.
