Combining mint and spice for a special mix of flavours

I love salmon and I normally eat it raw or grilled in teriyaki sauce. Sometimes, I’d bake it this way. I even cooked it in a curry once! It’s been awhile since we had salmon so I went and bought some recently. Salmon is full of nutrients and is one of the heart healthy food we should add to our diets so spending extra on it is worth it (it is imported, thus quite expensive compared to local fishes).

Now, last night, after work, I decided to do a quick meal of salmon. As part of our new healthy lifestyle diet (no, not to lose weight but to maintain good health *financially and physically…heheheh*), we are now eating at home most of the time. This means either I have to cook or The Food Critic will transform into my Personal Chef.

Anyway, when it comes to cooking in the evenings, we have to be quick. So, I used my very best kitchen helper, the microwave. Ah, I love my all-in-one microwave. It bakes. It grills. It roasts. It steams. It microwaves. It…you get the picture. And my beloved microwave grilled my salmon to look like this:

For the grilled salmon, I decided to combine two opposing flavours so that when you eat it, you get a blast of spiciness accompanied by the cooling effect of mint. Here’s how I do it:

Mint and Spice Salmon Recipe

Ingredients

1 tbsp black pepper

A dash of pepper

1 tbsp chili powder (or more if your prefer)

some salt

about 10 fresh mint leaves

300g salmon fillets

olive oil

Instructions

1. Rub the black pepper, pepper, salt and chili powder on the salmon fillet

2. Let it season for awhile, preferably 10 minutes or so.

3. Slightly crush the mint leaves to release its flavours and place it on top of the salmon

4. Drizzle some olive oil over the salmon.

5. Grill in the oven for about 7 minutes, then turn over the fish and continue grilling for another 5 minutes.

The salmon should be slightly browned and opaque

The mint leaves will have turned dark so you can either leave it there and eat it with the fish or discard it.

The grilled salmon ends up with a spicy taste to it with an added flavour of minty-ness to it. Talk about opposing tastes being brought together.

      I love salmon and this looks delish! I only eat it when out though because Grumpy won’t eat it. Bad Grumpy. He doesn’t know what is good for him!

      Wow! What a magnificent dish …. it looks like you are grilling it on a pan if you didn’t tell it is cooked in the microwave.

      HoneyB: Oh no, how could anyone not like salmon? Hmmm, I may have a salmon & chicken burger recipe coming up soon, maybe you could feed Grumpy that and he may like it?
