How to cook quinoa series: Two spicy ways to cook quinoa

Today, I shall continue with my Quinoa obsession with two spicy quinoa recipes. Actually, I just made spicy chili pork ribs and was really tempted to post that up BUT I have kept these quinoa recipes simmering for so long I guess I better not let it dry out.

So, I’ll keep the sinful pork ribs for another day and post up the sinless quinoa for now. Yep, healthy food all the way and darn good too, if I may say so. Now, on to my spicy quinoa babies…

For the first simple recipe:

Ingredients

1/4 cup quinoa (washed and rinsed, if yours is not de-saponised, soak it for 15 mins, then rinse several times)

1 cup boiling hot water

5 tbsp minced chicken

6 curry leaves

4 -5 dried chilies, cut into smaller pieces

dash of sea salt

1 tbsp chili powder/ chili flakes

1 tsp butter

1 tbsp diced garlic

Instructions

1. Heat up a non-stick pan, add the butter and sautée the garlic till fragrant.

2. Add in the drained quinoa and stir fry till it is sorta dried and then add the curry leaves, chillies and minced chicken.

3. Then you add the water, stir to mix the ingredients around, add the salt and chili power. Cover and simmer for 20 minutes over medium to low heat.Then check on it, if it is cooked and the water is almost all absorbed into the quinoa, cover and let it stand for another 5 minutes.

This is best served hot. This dish has all the taste of hot chili, chili powder and spicy scent of curry leaves to make it one hot dish so serving it hot is definitely a must!

Now, on to the next VERY SIMPLE spicy quinoa recipe:

How to cook Quinoa series: Sweet Spicy Quinoa with Wolfberries (suitable for vegetarians)

Ingredients

1/2 cup Quinoa (washed and rinsed)

1 cup boiling hot water

2 tbsp dried wolfberries

1 tbsp diced garlic

3 dried chilies, cut into small pieces

a dash of sea salt

1 tbsp olive oil

Instructions

1. Heat up non-stick pan. Add in drained quinoa and stir-fry till dry. Add the olive oil and then dump in the garlic, wolfberries and chilies.

2. Stir fry till fragrant.

3. Add in the water and then the salt. Stir and cover. Simmer over low to medium heat for 20 minutes. It’s cooked when the quinoa is all fluffed up.

This second sweet and spicy quinoa with wolfberries is actually the best of three worlds. Think about it:

Wolfberries are good for you.

Chillies are one of the fat burning foods.

Quinoa is a great gluten-free, high protein grain full of great benefits too.

So, yes, this dish is as healthy as it can get and easy too. Of course, you can always eat it as it is or serve it up as a side dish. The choice is yours.
