I used to make a lot of salsa, then bottle them up and keep in the freezer. I’d use them for my salads, sandwiches or even to eat with rice. It has been awhile since I made salsa. Since, I do not want to freeze them this time, I thought of changing the recipe a bit and made a sorta chicken and quinoa salsa stew. Today, I shall continue with my Quinoa obsession with two spicy quinoa recipes. Actually, I just made spicy chili pork ribs and was really tempted to post that up BUT I have kept these quinoa recipes simmering for so long I guess I better not let it dry out.

This is a continuation of my how to cook quinoa recipes where I try all sorts of ways to cook quinoa. As you may well know, I’ve already mentioned before about the health benefits of quinoa and how it is a great replacement for rice. It is also gluten-free and high in iron, amongst other things.
