Steamed Cream Cracker Cake

I had this sudden craving for steamed cream cracker cake but it is not sold anywhere. In fact, I tried asking around to see if anyone knows the recipe and not even my grandmother could help me on that. I remember eating steamed cream cracker cake a long time ago when a family friend made it but we have since lost touch with this family friend.

So, I did the next best thing. I googled it! Unfortunately, Google didn’t help me much this time. The closest to a steamed cream cracker recipe I could get to was the Sweet . . . → Read More: Steamed Cream Cracker Cake

Sweet and sour prawns and cuttlefish

I love prawns, especially fresh ones and regardless of whether it is sea water prawns or freshwater prawns, I simply love eating prawns!

I know, I know, it is not healthy to be eating prawns all the time due to the high cholesterol content but hey, it is not everyday that I eat prawns, okay? It isn’t exactly cheap nowadays, anyway. So, when I got about 10 free prawns, this is what I did with it:

Chocolate banana pancake

We happen to have a lot of bananas thanks to my FIL who went banana-crazy and gave us a lot of bananas so we got rather bored of eating two to three bananas a day.

With so many bananas, we probably can’t finish it before it spoils in our tropical humid weather. Instead of letting it go to waste, might as well use the bananas to make pancakes.

I found a banana pancake recipe here but I made some modifications to it and turned it into a chocolate banana pancake. To make it even more decadent, I also added . . . → Read More: Chocolate banana pancake

Stir-fried shellfish and vegetables

Here is another simple meal suggestion for two persons to be served with steamed fluffy healthy brown rice. It is another one of the simple combinations my husband cook (yes, you read right, my husband cooks!) whenever he feels like taking over the kitchen duty. By the way, he is a great cook, okay? He doubled up as my confinement ‘lady’ when I delivered our son so, that should give you an idea of how well he cooks! If that is not a good enough indication, let me tell you I had (and still have) difficulty going on diet . . . → Read More: Stir-fried shellfish and vegetables

Chicken recipes: Stir-fried minced chicken and vegetables for lunch

Chicken recipes series

When I cook, I usually cook small portions that are just enough for three of us and sometimes, I’d have a bit more just in case either of the two men at home wants to eat more. It is not easy trying to figure out what to cook even when I only cook twice a week, during the weekends. Usually, I’d go for something simple and easy so as to be able to get lunch ready within an hour or so.

Crunchy fried chicken

Due to my addiction to Uncle Bob’s fried chicken, I decided to make my own healthy fried chicken (as how they promote their fried chicken) with my own batter to make the chicken crunchy and yet as healthy as fried chicken could be.

However, we all know, anything deep fried is rarely healthy so I guess it ain’t all that healthy anyway and is probably loaded with millions of calories. Heh. Anyway, I experimented and finally came up with this simple and easy batter for the chicken and fry it to a crispiness that is almost like the Uncle . . . → Read More: Crunchy fried chicken
