skinless chicken breast/ chicken tenders
cubed

red / yellow pepper (capsicum)
cored, seeded and sliced

broccoli
cut into florets

carrot
sliced

tomato

shimeji mushrooms
can use any type of mushrooms

cooking oil

garlic

soy sauce

sesame oil

chicken stock
if using liquid chicken stock, use 1/2 cup chicken stock and omit the water

dissolve the chicken stock cube in this water, salt and pepper to taste
Instructions
Season the chicken cubes with salt and pepper, about 2 tsp each
Heat up cooking oil in a pan over medium heat.
Add in garlic, ginger, onion and mushroom. Stir fry till fragrant over low heat.
Add in the chicken pieces and cook over medium heat until it is cooked through.
Add in the broccoli and pepper. Cook over low heat for another 2 minutes.
Add in chicken stock, sugar and sesame oil.
Simmer for 1- 2 minutes or until chicken is cooked through.
Serve hot with rice.

Note: This can be used as a topping for noodles and even spaghetti.
