rice wine

oyster sauce

cut into small strip

vegetable oil

garlic
coarsely chopped

fresh ginger

fresh red chilies or dry chilli
seeded and sliced

Instructions
Heat up the oil on a medium heat and add in garlic, ginger and stir fry.
Add in some chilies and scallion and stir till fragrant.
Add in chicken and stir on a medium heat and stir till 70% cook.
Add in soy sauce, oyster sauce and sesame oil and water.
Add in sugar, white pepper and stir till the chicken is cook.
Add in rice wine and stir for a minute, it’s ready to be served.
